Effective Use of Compost and the Circulation to Partner Farms
Upon joining nôl, members are immediately struck by the restaurant's minimal waste output after business hours.
At nôl, the goal is to utilize ingredients in restaurant courses without any waste. Moreover, the restaurant meticulously sorts and composts all food waste, which is then transformed into fertilizer. Every two months, the members personally visit partner farms to use the compost as fertilizer.
To ensure that farming is not negatively impacted by the compost, nôl is conscious of the materials used in composting, avoiding those that may cause soil contamination or salt damage. Although nôl's efforts are currently small in scale, the restaurant is committed to expanding its circular activities and the connected initiatives in the future.
