The Use of Deer Meat

Due to population growth and economic development in various countries, the number of livestock has dramatically increased, leading to the production of greenhouse gases from animal husbandry and deforestation for pastureland, which have greatly impacted global warming. Furthermore, excessive animal husbandry has been criticized from the perspective of animal welfare, and calls for improvement are increasing. However, it is essential to balance the preservation of the livelihoods of meat producers who provide us with delicious ingredients and the preservation of the wonderful food culture of meat itself. Therefore, it is crucial for each restaurant to consider its own role and take action to maintain balance.
At nôl, we incorporate deer caught by renowned hunter Mr. Matsuno, who works in Shikaoi-cho, Hokkaido, into our year-round menu in collaboration with the town, while considering the balance between the natural environment and agricultural resources. By conveying the unique appeal of carefully processed deer meat, we aim to appreciate the already existing lives, consider the value of deliciousness, and thereby increase future choices and reduce the burden on the earth.
