Usage of Sturgeons

Caviar is a synonym for luxury food, and sturgeons raised for caviar production often have their males and females after the egg is harvested, discarded.
At nôl, we have incorporated sturgeon into our course dishes by utilizing the males and post-harvest females previously considered waste. This initiative was made possible through our collaboration with Miyazaki Prefecture and Solaseed Air, which transports these sturgeons via unused cargo space on passenger planes. As chefs, we believe it is our responsibility to find ways to use ingredients that were previously overlooked and turn them into a source of joy and surprise for our diners.
