When pursuing the art of gourmet cuisine, it is a fact that there are parts of ingredients that may be edible but cannot be used in a restaurant's course. Additionally, at nôl, we take care to transform crops that our producers cannot consume or that are difficult to put on the market, into carefully crafted pasta sauces, which we utilize at our café located within the DDD HOTEL.
We aim to expand these initiatives by collaborating with various food and beverage establishments beyond the traditional restaurant framework, and continue our efforts to reduce food waste as much as possible.
