The "Trash" Soup

At nôl, we offer a drink made from parts of ingredients that are usually discarded during the preparation process, such as roots, leaves, and trimmings, which we carefully dry, then boil using a siphon, and season only with salt before serving as a pre-dinner beverage.
Our aim is to encourage people to pause and reflect on the formation of an imbalanced market for certain luxury or rare ingredients that leads to the extinction of species, destruction of oceanic resources, and deforestation. Through this practice, we hope to promote a sustainable approach to finding deliciousness in everyday ingredients rather than perpetuating a consumerist attitude that places value only on scarce items.
What is the value of deliciousness that can be passed on to the future? We will continue to ponder this question and explore new ways to communicate the importance of sustainability through our experiences.
